The aao gene encodes aminoacetone oxidase (AAO, also known as LAAO) from Streptococcus oligofermentans AS 1.3089, a flavoprotein that catalyzes the oxidation of aminoacetone to form 3,6-dihydro-2,5-dimethylpyrazine, a direct precursor of 2,5-dimethylpyrazine, with concomitant generation of H2O2. Heterologous expression of aao in Escherichia coli reduces toxic aminoacetone accumulation and increases 2,5-dimethylpyrazine production; however, high expression levels elevate reactive oxygen species and impair cell growth [358].
