Description


2-Phenylethanol (2-PE) is an aromatic compound with a rose-like odor that is widely used in the cosmetics, perfumery, and food industries. It can be biosynthesized from the precursor phenylpyruvate via a pathway involving decarboxylation and subsequent reduction reactions. However, 2-PE exhibits inhibitory effects on Escherichia coli growth at concentrations above 1.0 g/L [350].
