Description


Aminoacetone (α-aminoacetone) is the direct product of L-threonine dehydrogenase catalysis and exhibits high toxicity toward Escherichia coli, significantly inhibiting cell growth and viability at concentrations above 2 g/L. It serves as the immediate precursor of 3,6-dihydro-2,5-dimethylpyrazine, formed either through spontaneous dimerization or via aminoacetone oxidase–catalyzed oxidation [358].
